Ingredients:
2 cups all-purpose flour
1 cup sugar
1 tsp baking powder
½ tsp salt
3 large eggs
1 tsp vanilla extract
1 cup almonds (toasted and chopped)
Instructions:
Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and vanilla. Add to dry ingredients, mixing until combined. Stir in almonds.
Divide dough in half. Shape into two logs (about 10" long). Place on baking sheet and flatten slightly.
Bake for 25–30 minutes until golden. Remove and let cool for 10 minutes.
Slice logs diagonally into ½" pieces. Place slices cut side down on the baking sheet.
Bake another 10 minutes per side until crisp.
Cool completely before dunking in your favorite coffee (or wine if you're feeling Tuscan).
